Ingredients

  • 2 Spoons Butter
  • 2 teeth Garlic chopped
  • 3 Stems Chopped leek only the white part
  • 1 Kilo Potatoes peeled and cut into small cubes
  • 1.5 Liter Broth or vegetable stock
  • 185 Ml Cream 36%
  • 1/2 Spoons Black pepper

Croutons

  • 2 Slices White bread diced
  • 1 Spoon Melted butter
  • Sun to taste
  • Chives
  • Cream for extra flavor
  • Bacon fried (optional)

Instructions

  • Remove the first leaves from the vegetable so that most of it is white. Cut the white part of the leek into small pieces.

  • Chop the garlic or crush it using a garlic crusher.

  • Add the butter to a large pot and melt over medium heat.

  • Add the garlic and leek and cook, stirring occasionally, for 7 minutes. The garlic should be aromatic and the leek should be slightly soft.

  • Add chopped potatoes and broth. Reduce the heat and simmer for 25 minutes, covered.

  • Blend the soup to make it smooth. Add cream. Season with salt and pepper.

  • Preheat the oven to 180°C.

  • Add bread to the baking tray, pour melted butter over it and sprinkle with salt. Place the tray in the hot oven and bake for 5 minutes. Remove from oven.
