For the parfait:

  • 150gSpekulatius

  • 4egg yolk

  • 80gZucker

  • 400gScene

For the compote:

For the meringue:

  • 4protein

  • 200gpowdered sugar

    Crumble the speculoos. Separate the eggs and place the yolks with the sugar and apple juice in a large mixing bowl and stir with a whisk. Set the egg whites aside. Beat the mixture in a warm water bath with a whisk until the mixture becomes foamy and doubles in size. Then place the bowl in cold water and continue beating the mixture until it has cooled. Then stir in the speculoos crumbs.

    Beat the cream until stiff and mix with the speculoos mixture. Pour the whole thing into the mold and let it freeze for at least 6 hours.

    To make the meringue, beat the egg whites until stiff and gradually add the powdered sugar. Using a spoon, spread the egg whites on a baking tray lined with baking paper and bake for approx. 1.5-2 hours at 100 degrees. Allow to cool and crumble into small pieces with your hands.

    For the compote, bring the sour cherries with the liquid and apple juice to the boil. Season with cinnamon. Skim off about 5 tablespoons of the juice and mix with the starch. Stir the starch mixture back into the sour cherries. Let everything simmer.

    To overturn the pan with the parfait, place the base briefly in hot water and run a pallet along the edge. Cut the parfait into slices, add some compote over it and garnish with the meringue.

The parfait needs to stay in the freezer for at least six hours, which is why it's best to prepare it the day before. This way you can arrange it beautifully straight away. Making the cherry compote yourself is of course the first side dish option. Since the combination of hot and cold as well as creamy and fruity goes wonderfully well, a hot berry compote is also a good addition - there are no limits to your creativity anyway.
