Rutger: 'Kaiserschmarrn look a bit like pancakes, but they are something completely different. This is due to the whipped egg whites being folded into the batter. That makes Kaiserschmarrn so super light. You can make this recipe in different ways.'

Fry them in a frying pan on the stove or partially bake them in the oven. Rutger is a fan of the latter method, because it cooks the batter very nicely and evenly. Rutger: 'Right out of the oven, tear the thick schmarrn into pieces and bake them briefly with some icing sugar until the outside is caramelized!'
