A legendary recipe from our British neighbors: fish and chips! Tender, flavorful cod fillets are coated in “batter,” a batter similar to doughnuts, and deep-fried. We serve them with homemade fries, of course! This typical British dish captures the hearts of everyone who crosses the Channel. With good ingredients, it is also very easy to make at home. Shall we treat ourselves to a little getaway?

    In a salad bowl, pour 150 g of wheat flour in a fountain. Add a pinch of salt and pepper, pour in the blond beer and an egg yolk. Mix using a wooden spoon then gradually dilute with the milk and water. Use a whisk to avoid the formation of lumps and obtain a very smooth and fairly liquid dough. Cover with cling film and leave to rest for 30 minutes in the refrigerator.

    Meanwhile, peel and wash the potatoes. Cut them into thick fries. Dry them using a clean cloth. Pre-cook them for a few minutes in the fryer at 150°C.

    Beat the egg whites until stiff then gently incorporate them into the dough, using a spatula (flexible spatula). Lift the preparation well so as not to break the egg whites.

    Rinse the cod fillets in clean water then dry them with absorbent paper. Pour the rest of the flour into a plate or deep dish. Turn the fish fillets over to cover them evenly with flour. Then dip them in the batter, making sure they are completely covered.

    In a large frying pan or deep fryer, heat the frying oil to over 160°C. Immerse the cod fillets coated in batter for 5 minutes. Once golden brown, place them on absorbent paper to remove excess oil.

    Finish cooking the fries by plunging them into the fryer for a few minutes at 180°C, until they are nicely browned.

Dietetics:

Frying and diet never go well together, so, for more lightness, you can opt for oven fries, which are less fatty. Do you prefer “real” fries? So don't have your eyes bigger than your stomach. You can still balance it out by preceding or following this very gourmet step with a lighter meal.

Tips

In pubs, the English serve this recipe for fried fish with pea puree, called mushy peas, an unmissable delicacy! Connoisseurs will also pour a drizzle of vinegar over fries and fish. Trust them, it’s divine!

Can we prepare the breading in advance?

The dough recipe does not resemble the traditional English recipe at all. It's not crispy. This is a good donut batter but it wasn't what I was looking for. Otherwise nothing to say. For seasoning I prepared a homemade tartar sauce

I don't make my fries in the fryer but in the oven to make them healthier. With just one tablespoon of olive oil you will have beautiful fries. Otherwise the recipe is perfect thank you!
